Our Wine - Cuvée Bois Noir
Bois Noir is a 50 year old plot. Its old vines, curving on the gentle slopes of Monplaisir Valley face South-West.
In Spring, our team sets out to multiple manual tasks around the vines including disbudding, leaf removal and green harvesting.
Grapes are harvested at the peak of their maturity but never too late in order to avoid over ripeness which further entails an undesirable prune jam taste.
Harvest is carried out early in the morning to avert oxidation. Grapes are then selected manually on a vibrating sorting table.
Pre-fermentative cold maceration allows a soft extraction of both color and aroma followed by the fermentation process that takes place in temperature-controlled stainless steel tanks.
Aging in French barrels then lasts from 12 to 14 months. Our barrels, Grande Futaie origins, with straight & tight grain oak are air-seasoned up to 36 months and renewed per third every year.
